Lentil and Aubergine Salad inspiration

I was just reading the Guardian's food page and this recipe caught my eye - it sounds delicious! And, as I currently have aubergines roasting in the oven, I think I will give it a bash for lunch tomorrow! Yum! (let's hope it's better than the sesame noodle debarcle of earlier in the week...)

  2. I had good intentions of making this. But in the end, when it came to lunch time, waiting around for the lentils to cook seemed too much effort. So instead I threw the chopped, roasted aubergine into some couscous with tomatoes and green peppers, splashed on some red wine vinegar and olive oil and chucked in a handful of parsley. It really wasn't very good. Next time I'll just follow the recipe! Or better yet, just eat the roasted aubergines with warm, fresh pita.
